Easy Apple Cinnamon Muffins with Streusel Topping



These delicious apple cinnamon muffins are perfect for a quick breakfast or a sweet snack. They are moist, flavorful, and topped with a crunchy streusel topping that adds an extra layer of goodness.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 1/2 cups diced apples peeled and cored

Instructions:

Preheat your oven to 375F 190C and line a muffin tin with paper liners

In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg

In a separate bowl, whisk together the melted butter, milk, vanilla extract, and egg

Pour the wet ingredients into the dry ingredients and stir until just combined

Gently fold in the diced apples

Divide the batter evenly among the muffin cups, filling each about 2/3 full

For the streusel topping, mix together 1/4 cup granulated sugar and 1/2 tsp cinnamon in a small bowl

Sprinkle the streusel mixture over the muffin batter in each cup

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean

Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
