Chickpea Sweet Potato Boats



These Chickpea Sweet Potato Boats are a healthy and tasty vegan meal. There is a lot of fiber and vitamin A in the sweet potatoes, and the chickpeas add protein and flavor. With avocado and fresh cilantro on top, these boats are sure to be a hit!

Ingredients:

  • 2 medium sweet potatoes
  • 1 can chickpeas, drained and rinsed
  • 1/2 red onion, diced
  • 1/2 red bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • Lime wedges, for serving

Instructions:

Preheat the oven to 400F 200C

Scrub the sweet potatoes and pierce them several times with a fork

Place them on a baking sheet and bake for 45-60 minutes, or until tender

In a large skillet, heat the olive oil over medium heat

Add the onion and bell pepper, and cook until softened, about 5 minutes

Add the chickpeas, cumin, paprika, salt, and pepper to the skillet

Cook for another 5 minutes, stirring occasionally

Once the sweet potatoes are done, let them cool slightly

Cut them in half lengthwise and scoop out some of the flesh to create a boat-like shape

Fill each sweet potato boat with the chickpea mixture

Top with fresh cilantro, avocado slices, and a squeeze of lime juice

Serve hot, and enjoy!
