Ingredients:
- 3 lbs pork loin
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1/2 tsp black pepper
- 1/4 cup chicken broth
- 2 tbsp cornstarch
- 2 tbsp water
- Pineapple chunks optional
- Green onions, chopped optional
Instructions:
Place pork loin in slow cooker
In a bowl, mix pineapple juice, soy sauce, honey, garlic, ginger, black pepper, and chicken broth
Pour over pork loin
Add pineapple chunks if desired
Cook on low for 6-8 hours or on high for 3-4 hours, until pork is tender
In a small bowl, mix cornstarch and water to create a slurry
Stir into the sauce in the slow cooker, cook on high for an additional 15 minutes until sauce thickens
Slice pork loin, drizzle with sauce from slow cooker, and sprinkle with green onions if desired
