Ingredients:
- 2 cups white chocolate chips
- 1/2 cup sweetened condensed milk
- 1/4 cup Baileys Irish Cream liqueur
- 1/2 cup shelled pistachios, chopped
- 1/4 cup unsalted butter
- 1/2 teaspoon vanilla extract
- A pinch of salt
Instructions:
Line an 8x8 inch 20x20 cm square baking pan with parchment paper, leaving an overhang on the sides for easy removal
In a microwave-safe bowl, combine the white chocolate chips and sweetened condensed milk
Microwave in 30-second intervals, stirring between each, until the mixture is smooth and fully melted
Stir in the Baileys Irish Cream, unsalted butter, vanilla extract, and a pinch of salt until well combined
Fold in the chopped pistachios, reserving a small portion for topping
Pour the fudge mixture into the prepared pan, spreading it evenly with a spatula
Sprinkle the remaining chopped pistachios on top of the fudge, gently pressing them in
Refrigerate the fudge for at least 2 hours or until it is set
Once set, use the parchment paper overhang to lift the fudge out of the pan
Place it on a cutting board and cut into squares or rectangles
Serve and enjoy! Store any leftovers in an airtight container in the refrigerator
